About this wine
Made by Greece’s superstar winemaker Apostolos Thymiopoulos, this is a delightful blend of Xinomavro and Mandilaria (again, pronounciation is not important here!). Incidentally, the Mandilaria grapes in this wine come from Santorini where, in white wine terms, Assyrtiko is king!
Xinomavro translates as 'acid black' or 'sour black' but you'll find no harshness in this wine thanks to Apostolos' gentle touch when it comes to this grape - in the winemaking world he's known as the Xinomavro master. The bright red fruit and crunchy pomegranate flavours meld wonderfully with the more concentrated flavours from the Madilaria grapes, which have been left to dry for 3 days in the Santorinian sun to add complexity and fullness. This wine is also vegan and organic.

The Thymiopoulos family has been in agriculture and grape-growing for generations. Apostolos Thymiopoulos was the first to vinify the family vineyards while studying oenology and, in 2005, he produced his first wine. Since then, he has been a leading light in the Greek wine world, converting the family vineyards to biodynamic and organic practices, and working tirelessly to ensure that the whole world comes to know the fantastic potential of the Xinomavro grape.
The microclimate in Naoussa region is warm continental with the cooling winds from Mt Vermio being crucial for the quality of the grapes. In Santorini the climate is warm Mediterranean with short winters and long, dry and hot summers being tempered by the strong sea winds.
